Four to six strangers are paired up around one table at a restaurant that stays secret until closer to the night, so everyone starts from the same blank slate. It suits newcomers to the city and busy locals who like a little spontaneity, and the meal goes to a locally owned business. If too few people sign up, the evening may move to another night.
